Lead a culturally diverse and dynamic working environment of 5+ Sous Chefs and over 75+ high-performing culinary staff
Oversee 10-15 F&B outlets
Ensures high-quality, palatable, and well-presented foods are served
Maintain a safe and healthy work environment for employees and guests
Plan and direct food preparation and culinary activities
Modify menus or create new ones that meet quality standards
Estimate food requirements and food/labor costs
Always adheres to brand standards
An Associate Degree or bachelor’s degree in hotel management OR Culinary Arts or a related field from an accredited university or equivalent
A minimum of 3-5 years experience as an Executive Chef on a large cruise ship or multi-venue, high volume, luxury hotel or resort is MANDATORY
Large banquet experience of 1,500 pax
Must have strong and effective leadership skills
Good organizational, interpersonal, and communication skills
Intermediate to advanced knowledge of all basic cooking techniques is required
Intermediate to advanced knowledge of Classical European, International, and World Cuisine, including cooking philosophies and principles, is required based on the applied positions
Experience in pre-opening projects, multi-unit oversight, and training and development skill will be an added advantage
Strong understanding of various cooking methods, ingredients, use of modern equipment, and procedures of a professional kitchen environment·
